This wine is the result of the ancient tradition of rosé vinification, described, in Sicilian dialect, with the phrase of: Pista e ‘mbutti (crush and put in the barrel). It consists in extracting the freshly formed sweet must immediately after the grapes have been destemmed from the fermentation tank, before it begins to ferment and take on color. The fresh must, without skins, is poured into a steel fermentation tank. Once all the fermentations have been completed, the new wine, in November, is decanted and left to refine in a steel tank. Bottled in June 2023. It is not subjected to any treatment. Any residues are due to this natural process. The aroma and flavor are reminiscent of those of freshly picked ripe black grapes.
